Zusammenfassung:A method for preparing bread by using rice, and the bread prepared by the method are provided to prepare the bread having the taste equal to the bread prepared by using wheat, thereby promoting the consumption of rice. A method for preparing bread by using rice comprises the steps of adding glutaminase to a rice flour; and making bread by using it. Preferably the glutaminase is transglutaminase, and the amount of transglutaminase is 0.001-1.0 parts by weight based on 100 parts by weight of a rice flour. Preferably the rice flour has a particle size of 160-240 mesh.
