Zusammenfassung: | PURPOSE: An uncooked food product composition containing natural antimicrobial peptide that inhibits growth of bacteria(Bacillus sp.) is provided. It has an effect of suppressing the growth of bacteria(Bacillus sp.) which is got into raw material during the manufacture, gives rice to a cause of food spoilage and causes food poisoning thereby being used in improving production quality. CONSTITUTION: The uncooked food product composition contains 0.1% or more by weight of cultures of bacteriocin-producing strains or 2ppm(liquid-type uncooked food product) or 10ppm(powder-type uncooked food product) natural antimicrobial peptide bacteriocin. For an example, the uncooked food product composition containing natural antimicrobial peptide bacteriocin exhibits an effective effect on inhibiting Bacillus cereus in a predetermined level. |
