Zusammenfassung: | PURPOSE: A method of encapsulating purified egg yolk immunoglobulins from immunized hens using a fluidized bed granulator is provided. It ensures the safety of egg yolk immunoglobulins against heat and acid, thereby improving the safety in the processing and digestive organs. The encapsulated egg yolk immunoglobulins are used in the manufacture of functional fermented milk or beverages, health supplementary food, baby food or the like. CONSTITUTION: An encapsulation method of egg yolk immunoglobulins comprises: putting starch, maltodextrin, sucrose or dextran as hydrocarbon-based coating material into a chamber(60), introducing air at 40 to 85deg.C and at 80 to 100psi thereinto for flotation and spraying liquid egg yolk immunoglobulins 1/3 to 1/30 times the weight of the hydrocarbon-based coating material to produce egg yolk immunoglobulins powder; introducing the egg yolk immunoglobulins powder and air for flotation and spraying 5 to 50% by weight of whey protein, casein, milk permeate or whey permeate solutions as protein-based coating material through a nozzle(64) to produce a capsule. |
