description PURPOSE: A cholesterol reducer and a health food containing low molecular weight of chitosan and -polylysine as main raw materials and a method for producing the low molecular weight chitosan are provided, thereby dropping the blood cholesterol level dramatically. The method for producing the low molecular weight of chitosan comprises the steps of: deprotonation and deacetylation of chitin to obtain chitosan and dissolving it in an organic acid solution; inserting chitosanase to the chitosan dissolved organic acid solution; and subjecting the chitosan-decomposed solution to ultracentrifugation to selectively obtain 2,000 to 20,000 dalton of chitosan.
