Zusammenfassung:PURPOSE: Provided is a method for manufacturing chestnut powder with specific taste and flavor of which quality does not change during storage or distribution and which is useful in making cookies and bread. CONSTITUTION: The method for manufacturing chestnut powder is characterized by the following steps of: i) peeling chestnuts, cutting the chestnuts into 4-8 pieces, and washing the pieces; ii) drying the fragments at 70 deg.C for six hours; iii) selecting pieces containing 8-12% of moisture; iv) puffing the pieces under the pressure of 4.8-5.2 bar; v) selecting puffed pieces; vi) grinding the puffed pieces at the speed of 1450-1550 rpm in a grinder; and vii) selecting 10-80 mesh of powder and wrapping it.
