Zusammenfassung: | The present invention relates to a method for manufacturing salted blue crab. More specifically, the method comprises: a cleaning step of removing foreign substances and impurities from blue crabs to produce prepared blue crabs; a grinding step of grinding the prepared crab to produce ground crab; a salting step of preparing salted crab by mixing the crushed crab with salt, garlic, and red pepper powder; and a ripening step of producing salted blue crab by ripening the salted blue crab in a storage box. According to the present invention, the method is configured to produce salted blue crab containing pulverized blue crab carapace through a grinding process on prepared blue crab, and thus it is possible to easily consume taurine, which improves the function of blood vessels and digestive organs, and chitosan, which is effective in suppressing aging and improving immunity.
본 발명은 꽃게 젓갈 제조방법에 관한 것이다. 더욱 상세하게는, 꽃게에서 이물질 및 불순물을 제거하여 손질 꽃게를 제조하는 손질단계; 상기 손질 꽃게를 분쇄하여 분쇄 꽃게를 제조하는 분쇄단계; 상기 분쇄 꽃게와 소금, 마늘 및 고춧가루를 혼합하여 염장 꽃게를 제조하는 염장단계; 및 상기 염장 꽃게를 보관함에서 숙성시켜 꽃게 젓갈을 제조하는 숙성단계가 포함되는 것을 특징으로 한다. 본 발명에 의하면, 손질 꽃게에 대한 분쇄 과정을 거쳐 분쇄된 꽃게 갑각이 포함되는 꽃게 젓갈을 제조할 수 있도록 구성됨으로써, 혈관 및 소화기관의 기능을 향상시키는 타우린과 노화 억제와 면역력 향상에 효과가 좋은 키토산을 용이하게 섭취할 수 있도록 구성되는 효과가 있다. |
