Zusammenfassung:The present invention relates to a pH-dependent release microcapsule comprising a natural antimicrobial substance and a natural polymer chitosan, and to a production method thereof and, more particularly, to a microcapsule which causes pH-dependent release of the natural antimicrobial substance at an appropriate pH using chitosan, a natural polymer, and is capable of adjusting an emission pattern by varying the ratio of an additive, and to a production method thereof. The microcapsule of the present invention is applicable to fermented foods which require release from appropriate acidity, such as fermented fish, and is suitable for mass production on an industrial scale. 본 발명은 천연항균물질 및 천연고분자 키토산으로 이루어진 pH 의존 방출형 마이크로캡슐 및 그의 제조방법에 관한 것으로, 더욱 상세하게는 천연고분자인 키토산을 사용하여 천연항균물질이 적절한 산도에서 pH 의존 방출되도록 함과 동시에, 첨가제의 비율을 달리하여 방출 패턴의 조절이 가능한 마이크로캡슐 및 그 제조방법에 대한 것이다. 본 발명의 마이크로캡슐은 젓갈과 같이 적절한 산도에서의 방출을 필요로 하는 발효 식품에 적용 가능하며 산업적 규모의 대량생산에 적합하다.
