Zusammenfassung:The present invention relates to a method of producing an edible Tenebrio molitor oil. The method of the present invention comprises the steps of: washing and dewatering Tenebrio molitor larvae; heating and pretreating the washed and dewatered Tenebrio molitor larvae; hot air-drying the heated and pretreated Tenebrio molitor larvae; pressing the hot air-dried Tenebrio molitor larvae and extracting oil from the Tenebrio molitor larvae to obtain oil; and storing the obtained oil at low temperatures to produce a precipitate, removing the produced precipitate from the oil, and centrifuging the precipitate-removed oil to collect a supernatant only from the centrifuged oil. The edible Tenebrio molitor oil obtained by the method can be provided as an edible health functional oil or a high quality health functional food since the edible Tenebrio molitor oil contains large amounts of unsaturated fatty acids such as linolenic acid (ω-3 fatty acid), linoleic acid, oleic acid and the like, and functional materials such as tocopherol, squalene and phytosterol (stigmasterol, ergosterol and the like), contains a light amount of cholesterol, is free from benzopyrene, and has good taste and flavor. Further, the edible Tenebrio molitor oil is provided in the form of a soft capsule such that the edible Tenebrio molitor oil can also be used as an easily portable nutritious tonic product. 본 발명은 갈색거저리 식용기름의 제조방법에 관한 것으로서, 상기 방법으로 얻은 갈색거저리 식용기름은 오메가-3 지방산인 리놀렌산(linolenic acid) (ω-3 지방산), 리놀산(linoleic acid), 올레산(oleic acid) 등의 불포화지방산, 토코페롤, 스쿠알렌 및 파이토스테롤 (stigmasterol 및 ergosterol 등) 기능성 물질이 다량 함유되어 있으면서도, 콜레스테롤 함량이 미미할 뿐만 아니라 벤조피렌이 없고 맛과 향이 좋아 건강기능성 식용유 또는 고품질의 건강기능식품으로 제공될 수 있다. 또한 상기 갈색거저리 식용기름은 연질캡슐 형태로 제공됨으로써 휴대가 간편한 자양강장제 제품로서도 이용가능하다.
