Zusammenfassung:	The present invention relates to a method for producing a lotus root dumpling. In particular, a lotus root pulverized material is contained in a dumpling stuffing or lotus root powder is contained in a dumpling skin, so large quantities of beneficial nutrients of lotus roots are contained. Also, a problem caused by the bitter and astringent taste of lotus roots is solved so the dumpling of the present invention can exhibit optimal functionalities. According to the present invention, the lotus root dumpling in which the beneficial nutrients of lotus roots are contained in large quantities and which has excellent taste and flavor can be produced.
