Zusammenfassung:The present invention relates to a method for drying abalone and sea cucumber under low-temperature humidification, in which a magnetron generating microwaves is installed in refrigeration facilities capable of maintaining a low-temperature state of 5-15°C even when heat is generated from the inside due to other devices, after which the abalone and sea cucumber are dried by repeatedly conducting a drying process of heating abalone and sea cucumber in a dielectric heating manner using microwaves generated from the magnetron to uniformly evaporate moisture and a soaking process of continuously spraying warm water of 30-33°C, room temperature water of 11-12°C, and cold water of 3-4°C for a predetermined period of time. Accordingly, a high quality dried product can be produced which can not only significantly shorten the drying time compared with natural drying or hot-wind drying while minimizing the damage of the original form such as volume reduction due to drying, but also maintain a uniform degree of drying and obtain an excellent chewy texture and realize the restoration to the volume level of the initial biological conditions when being boiled or soaked for food after drying.
