Zusammenfassung:The present invention relates to method for making tricolor multi-grain bread and tricolor multi-grain bread made thereby. The objective of the present invention is to provide tricolor multi-grain bread capable of being actively distributed as health food regardless of age and sex by using mixed grains (sorghum, black rice, and corn) as materials for bread to naturally supply nutrients of the mixed grains, and showing three different colors through one kind of bread by using a mixed grain powder of sorghum, black rice, and corn exhibiting different colors. The method for making tricolor multi-grain bread according to the present invention comprises: a first step of preparing a paste obtained by mixing medium wheat flour, sugar, salt, raw yeast, baking powder, a mixed grain powder of sorghum, black rice, and corn, a baking metering agent, water, and shortening, and preparing an adzuki bean paste obtained by mixing adzuki bean, walnuts, almonds, pumpkin seeds, and corn; a second step of, after the preparing the paste obtained by mixing materials in the first step, fermenting the paste, and then putting 23-27 g of the adzuki bean paste based on 40 g of the fermented paste to make a round bread raw material; a third step of fermenting the bread raw material made in the second step; and a fourth step of steaming the bread raw material fermented in the third step. Thus, tricolor multi-grain bread is made by using the mixed grain powder of sorghum, black rice, and corn exhibiting different colors to allow one kind of bread to show three different colors. In the first step, 45-55 g of the sugar, 7-8 g of the salt, 14-16 g of the raw yeast, 2-3 g of the baking powder, 45-55 g of the mixed grain powder of sorghum, black rice, and corn, 2-3 g of the baking metering agent, 300-330 g of the water, and 24-26 g of the shortening are mixed with 500 g of the medium wheat flour.
