Zusammenfassung: | PURPOSE: A method of processing vegetables as replacement for dried radish leaves(Siraegi) is provided to produce the dried radish leaves used for all kinds of pot stews or soup, and to improve tastes and nutrients of Siraegi. CONSTITUTION: A method of processing vegetables as replacement for dried radish leaves(Siraegi) comprises the following steps: harvesting the vegetables selected among turnip, young radish and Chinese cabbage at an immature state; parboiling the immature vegetables after washing; manufacturing flavoring liquid by boiling green tea leaves 50~80 parts by weight and Chinese pepper powder 5~10 parts by weight based on Cinnamomi Cortex 100 parts by weight with water; adding onion 800~1,200 parts by weigh in boiling water for 20 ~ 60 minutes; adding Laminaria japonica 100 parts by weight in water and making soup after putting the onions and Laminaria japonica out of a pot; making flavoring liquid containing soup; dipping the vegetables in the flavoring liquid containing soup for 30 ~ 180 minutes; and dehydrating the dipped vegetables to moisture contents of 30%. |
