Zusammenfassung:PURPOSE: Provided is a preparation method of frozen chocolate which can maintain soft feeling despite cool storage, stored in a cooling room or refrigerator and in which there is no alien feeing or bloom phenomenon despite repeated freezing and thawing. CONSTITUTION: A method for preparation of frozen chocolate is composed of following steps of: (a) refining cocoa liquor, mixing cocoa butter, cocoa powder, nonfat dry milk, sugar and lactose, letting the mixture pass through a roller and pulverizing it to produce a flake; and (b) refining the flake, adding an emulsifier and a spice thereinto, manufacturing the mixture into a sheet form, mixing it with vegetable oils and fats, pouring the mixture into a molds, cooling, and packing it.
