Zusammenfassung:	NEW MATERIAL:A heat-resistant neutral protease having a molecular weight of about 35,000 and the following physical and chemical properties. Action, hydrolyzing proteins such as casein and producing peptide or amino acid; optimum pH and stable pH, optimum pH is 7-8 and stable even by being left at pH 6-9 and 40 deg.C for 20hr; optimum temperature, optimum working temperature is about 80 deg.C; influence of inhibitor, inactivated by EDTA and free from inhibition by PHSF. USE:Useful for the hydrolysis of natural proteins such as casein or synthetic peptides such as carbobenzoxy.glycyl.leucine. PREPARATION:Bacillus stearothermophilus (FERM P-9439) is cultured in a nutrient medium and the objective enzyme is separated and purified from a crude enzyme liquid obtained by removing bacterial cells, etc., from the resultant cultured liquid.
