Zusammenfassung: | PURPOSE:To continuously obtain the titled yoghurt having excellent texture, by sterilizing and cooling a yoghurt mix containing a gelatin stabilizer, then cooling the fermented yoghurt mix and simultaneously filing the resultant plural kinds of yoghurts a container. CONSTITUTION:A yoghurt mix containing or further other stabilizers as a stabilizer is prepared in a raw material tank, homogenized in a homogenizer, sterilized and cooled in a sterilizer. The resultant sterilized yoghurt mix is then fermented and cooled to form a yoghurt having >=1,000cP viscosity at 5-20 deg.C for a white part. On the other hand, a yoghurt for a colored part is formed by operation similar to that described above except that a perfume and coloring matter, etc., are added. Two or more kinds of the yoghurts are then simultaneously filled in a container to form a multicolor pattern and afford the aimed yoghurt. |
