Zusammenfassung:PURPOSE:To produce a glutathione-containing embryo bud extract, by adding an yeast and water to embryo buds, fermenting the yeast and directly separating a liquid from a solid or heating the fermentation product and separating the liquid. CONSTITUTION:A baker's yeast, etc., in an amount of 0.1-10% based on raw material embryo buds is added to an aqueous suspension of grain or bean embryo buds to extract glutathione (GSH) or other active ingredients under condition of about 30 deg.C. The yeast is simultaneously fermented to reduce the sugar content in the extract solution. Residues are separated from the culture fluid after completing the extraction.fermentation steps and the extract solution is then heat-treated at 50-200 deg.C, preferably 80-100 deg.C for 1-60min, preferably 5-20min and then separated into the solid phase and liquid phase. The solid phase, such as thermally denatured proteins, is removed and the extract solution separated from the solid phase is concentrated to afford a GSH-containing embryo bud extract. The GSH-containing extract is also obtained by directly concentrating an extract solution after separating residues without passing through the heat treatment.
