Zusammenfassung:PURPOSE:To determine a fermentation flavor component quickly and with a high sensitivity using a fast liquid chromatograph, by employing a reaction liquid with aniline added. CONSTITUTION:A sample solution obtained by extraction processing of a fermen tation food sample by methanol is mixed with a reaction liquid in which 2,4- dinitrophenyl hydrazine is dissolved into a mixed liquid of chloric acid and methanol with aniline added to react at 20-40 deg.C, preferably at 25-35 deg.C. The reaction mixed liquid thus obtained is applied to a fast liquid chromatograph to analyze organic components containing a carbonyl group such as acetoin acetoaldehyde and diacetyl as flavor component for fermentation food.
