Zusammenfassung:PURPOSE:To prepare a rice embryo food, by defatting a rice embryo using subcritical or supercritical carbon dioxide as an extractant. CONSTITUTION:A rice embryo food is prepared from rice embryo produced as a by-product of rice-polishing process, by defatting the rice embryo using subcritical or supercritical carbon dioxide as an extractant. The defatted rice embryo has popcorn-like burst form and can be easily crushed. Delicious noodles having high protein content can be prepared by adding the rice embryo powder having high protein content to a raw material for noodles such as buckwheat flour, wheat flour, etc. A gelatinized rice embryo food having high nutritive value is prepared by heating the rice embryo in the presence of water and drying the obtained mushy product under reduced pressure.
