Zusammenfassung:PURPOSE:To continuously obtain a starch saccharide in high yield, by reacting a maltooligosaccharide-producing amylase with a liquefied starch solution, adjusting the saccharide composition therein within a specific range and passing the resultant solution through an immobilized glucoamylase column. CONSTITUTION:A maltooligosaccharide-producing amylase is reacted with a liquefied starch solution to adjust the saccharide composition therein so as to provide glucose polymerization degree within the range of 2-8. The resultant liquefied starch solution is then passed through a column of immobilized amylase at a flow velocity of 0.5-3.0/hr superficial velocity (SV). Maltotriose-producing amylase produced by Bacillus subtilis TU strain (FERM-P No.684) or maltotetraose-producing amylase produced by Pseudomonas stutzeri is efficiently and preferably used as the maltooligosaccharide-producing amylase.
