Zusammenfassung:PURPOSE:To obtain the titled compound useful for drugs, foods, etc., industrially advantageously, by treating a cell of a bacterium capable of producing histidine ammonia-lyase or a treated material thereof with urocanic acid and an ammonium source and collecting the reaction product. CONSTITUTION:A cell of a bacterium [e.g. Brevibacterium ammoniagenes (ATCC-6872), etc.] capable of producing histidine ammonia-lyase or a treated material thereof is treated with urocanic acid or an ammonium source (e.g. ammonium sulfate, etc.) to form L-histidine, which is collected from the reaction solution by an ordinary method such as ion exchange resin method, precipitation method, etc., to give the aimed compound.
