CONSTITUTION:A dried and smoked bonito extract is extracted and separated from ground powder obtained by grinding and form adjusting of coarse dried bonito in producing dried bonito with carbon dioxide in a subcritical or supercritical state as an extracting reagent. Water or ethanol or both as a suitable extraction assistant area, as necessary, incorporated with the carbon dioxide for use. The selective separation and fractionation can be readily carried out with a high efficiency in the above-mentioned step and the fractionated and obtained extract can be reincorporated at a suitable ratio to give a seasoning having a desired flavor and taste. The dried and smoked bonito extract obtained by the extraction in an amount of 0.01-1wt% can be added to a seasoning stock solution obtained from a sardine, mackerel, horse mackerel, tangle, etc., by an enzymic decomposition method, etc., to give remarkable effect on modification of the seasoning stock solution. |
