Zusammenfassung:PURPOSE:The particles or granules of kefir are inoculated on a mixed medium of soybean milk and cow milk or defatted milk and cultured to give the titled food which has good body and taste and is good for the health. CONSTITUTION:Kefir particles or granules are inoculated on a mixed culture medium of soybean milk of 8-10% solid content and cow milk or defatted milk of 8-10% solid content at a weight ratio of 2/8-8/2 and cultured at 17-30 deg.C for over 24hr to form a curd. The curd can be served as such or, when needed, combined with sugar solution, flavors or colorants to give the titled food.
