Zusammenfassung:PURPOSE:To enable the control of hardness of ice cream having overrun and to improve the yield of ice cream product having overrun, by adjusting the cooling capacity of a continuous freezer and controlling the pressure drop in a transfer pipe connected to an extrusion head. CONSTITUTION:Pressure drop in a transfer pipe connected to an extrusion head of a continuous freezer 3 is detected with a pressure-drop detector 17. An electrical signal from the detector 17 is transmitted to a controller 18 and transferred through an electropneumatic converter 19 to an automatic control valve 20 to adjust the opening of a return valve 6 of refrigerant. The amount of the refrigerant supplied to a cooling jacket 23 of the freezer 3 is controlled to control the cooling temperature of the freezer 3. The hardness of an ice cream having overrun and extruded from the freezer 3 can be maintained within a proper range by this operation.
