PRODUCTION OF BAGGED BOILED EGG MIXTURE

PURPOSE:To produce the titled boiled egg mixture having high nutrient value and preservable for a long period, by breaking an egg, removing the egg shell, mixing the yolk with the albumen, sealing the mixture in a cylindrical bag having small diameter, and coagulating the content with heat. CONSTITUTION:Washed egg 1 is supplied through the conveyor 2 to the hopper 4 of a breaking and stirring machine 3, broken with the breaking edge 6 in the breaking pipe 5, and separated into the egg shell 7 and the yolk and albumen by the screen 8. The shell 7 is dropped on the net plate 10 of the container 9. The yolk and albumen are dropped through the gaps of the screen 8 into the stirring chamber 11, if necessary added with proteins, seasonings and flavors, and mixed with the stirring plate 12 attached to the stirring shaft 13. The mixture is transferred through the hose-insertion pipe 16 furnished with a ball valve 15, and filled in the cylindrical bag 17 having small diameter and made of e.g. a vinyl resin, etc. The bag is sealed and divided into proper portions to obtain the bag 18 containing uncooked egg. The bag is placed horizontally on a conveyor 20 extended in the heating tank 19 to effect the coagulation and integration of the content, transferred to the conveyor 22, blasted with air fan 24 to dry the water attached to the surface of the bag 21, and cooled in the cooling chamber 25 to obtain the objective bagged egg.
