CONSTITUTION:In preparing a fatty acid ester by subjecting fats and oils or a fatty acid monoalkyl ester and an alcohol to alcoholysis, lipase produced by a microorganism belonging to the genus Alcaligenus, Arthrobacter, or Pseudomonas, or a culture of the microorganism is used as a catalyst, and the reaction is carried out in a solventless state.
