Zusammenfassung:PURPOSE:To obtain L-aspartyl-L-phenylalanine methyl ester efficiently, by treating a specific microorganism L-aspartic acid and L-phenylalanine methyl ester in an aqueous medium. CONSTITUTION:A microorganism capable of condensing L-aspartic acid with L- phenylalanine methyl ester (PM) to produce L-aspartyl-L-phenylalanine methyl ester is treated with L-aspartic acid and PM in an aqueous medium containing >=200ppm cation concentration, to form AMP. A microorganism belonging to the genus Alcaligenes, Achromobacter, Corynebacterium, Escherichia, Flavobacterium, Geotrichum, Micrococcus, Pachysolen, Sarcina, Sporobolomyces, Saccharomyces, Trichosporum, Torulopsis, Rhodotorula, Xanthomonas, Pseudomonas, Klyveromyces, or Endomyces is used as the microorganism.
