Zusammenfassung:PURPOSE:To obtain the titled drink preservable for a long period without heat- treatment, and having excellent taste, flavor and color, by subjecting the stock solution of a drink such as fruit juice, water extract of tea, coffee, etc. to the ultrafiltration treatment, thereby removing the microorganisms and enzymes from the solution. CONSTITUTION:The objective drink can be produced by removing microorganisms and enzymes from a stock solution of a drink, e.g. juice of fruit such as orange, extract of tes, coffee, etc. with water, etc., using an ultrafiltration membrane apparatus (preferably a tubular-type hollow fiber having a pore diameter of 2-4nm and a critical molecular weight of 2,000-8,000).
