Zusammenfassung:PURPOSE:To prevent cycling phenomena and to prepare a whipped food having constant quality, by regulating the channel resistance at an outlet part of a rotary stirrer for whip for extruding a whipped food, keeping feed pressure to the stirrer constant. CONSTITUTION:In a continuous preparation method of a whipped food using the rotary stirrer 5 for whip, the channel resistance at the outlet part of the stirrer to extrude the whipped food is regulated, so that feed resistance to the stirrer 5 is kept constant. In order to do it, the outlet part of the stirrer 5 is equipped with the controlling valve 6, etc., and the channel resistance at the part is regulated. By this regulation, the retention time of cream in the stirrer 5, namely stirring time, is controlled constant, and flow rate at the outlet is made constant. Consequently, cycling will not occur, quality of prepared product is made uniform, to give an improved whipped food.
