Zusammenfassung:PURPOSE:To prepare a ptisan in a high concentration capable of being diluted at a high dilution ratio for use, by mixing barleys roasted at different temperatures according to the respective purposes of coloring the ptisan, flavoring and aromatizing the ptisan, and extracting the resultant mixed barleys under specific conditions. CONSTITUTION:A raw material barley is roasted under strong heating conditions to give a coloring barley. On the other hand, the raw material barley is roasted under weak heating conditions to afford a flavoring barley. Both are then mixed and extracted in the presence of water under such conditions as to satisfy the formula [T( deg.C) is the heating temperature; M (min) is the heating time; H is the weight ratio between the water and the barleys] consisting of the heating temperature (T), heating time (M) and the weight ratio (H) between the water and the barleys to be used to give a concentrated extract of a ptisan, which is if necessary clarified by a suitable means to prepare the aimed concentrated ptisan. Thus, the aimed ptisan of high quality having a favorable flavor, fragrance and hue can be obtained by diluting the resultant concentrated extract with cold water at several times dilution ratio of course even at a dilution ratio as high as 30 times.
