Zusammenfassung: | PURPOSE:To prepare the titled composition having excellent shape-retainability and high resistance to the granulation of the texture, and suitable for the preparation of margarine, by mixing hardened palm oil with a liquid oil to effect ester exchange reaction, and blending the resultant two kinds of reaction products with hardened palm oil and a liquid oil. CONSTITUTION:10pts.wt. of a hardened palm oil having a melting point of >=50 deg.C (measured under heating) is mixed with 90pts.wt. of a liquid oil containing 65-70% of polybasic unsaturated fatty acid, such as cottonseed oil, sunflower oil, corn oil, etc., and subjected to the ester exchange reaction randomly by conventional method to obtain an ester exchange reaction product I . 20pts.wt. of the above palm oil is mixed with 80pts.wt. of the liquid oil, and subjected to the ester exchange reaction by the similar manner to obtain ester exchange reaction product II. The objective composition having excellent spreadability and shape-retainability can be prepared by blending 15-25pts.wt. of the reaction product I , 70-60pts.wt. of the reaction product II, 5-10pts.wt. of the hardened palm oil and 10-5pts.wt. of the liquid oil. More than 50% of the constituent fatty acids of the composition are essential fatty acids. |
