Zusammenfassung:PURPOSE:To prepare a fermented soybean drink having the delicious taste of AMAZAKE (sweet drink made from fermented rice) and containing various components of soybean necessary to maintain the health, by boiling and grinding whole soybean grains, adding a sugar and yeast thereto, fermenting the mixture, and sterilizing the product. CONSTITUTION:Whole soybean grains are boiled preferably without immersing in water, ground, added with about 5-30% of sugar and about 2-10% of yeast, and fermented at 15-25 deg.C for 4-20hr. The fermentation product is optionally added with a sugar, and sterilized to obtain the objective fermented soybean drink having the taste of AMAZAKE. Baker's yeast (Saccharomyces cerevisiae) or sake yeast (Saccharomyces sake) is suitable as the above yeast because it produces the flavor of AMAZAKE. The sugar is preferably glucose, fructose, etc.
