CONSTITUTION:Penicillium multicolor KU-O-132 strain (FERM-P No.4375) is cultured at 2.5-9 pH and 10-40 deg.C for 1-8 days under aerobic condition, and the objective novel beta-galactosidase having excellent pH stability and temperature stability is separated from the filtrate or extract of the cultured liquid.
