Zusammenfassung:PURPOSE:To prepare capsules containing fruit juice, etc., having desired color and flavor, and collapsible easily in the mouth, by enclosing fruit juice or vegetable juice with thin membrane composed of xanthan gum and protein. CONSTITUTION:0.01-2.0pts, preferably about 0.5pt. of xanthan gum is dissolved in 100pts. of an aqueous solution of fruit juice and/or vegetable juice, and if necessary, a sweetener, a colorant, a flavor, etc. are dissolved in the solution. The obtained solution is dripped or poured into an aqueous solution of positively charged proteins obtained by dissolving a protein food such as milk casein, cheese, skim milk, etc. in an aqueous solution of an edible acid such as citric acid, phosphoric acid, etc. at a casein concentration of 1-8%.
