Zusammenfassung:	PURPOSE:To minimize the amount of oxygen sealed in the space of a food container in the filling of a food in the container, by using a food filling apparatus composed of a tent covering the food filling part, a tunnel connected with said tent, and a device for supplying the substitution gas. CONSTITUTION:A container is filled with a food by a filling machine, transferred to the chain conveyor 4, sent through the chain conveyor 5 to the seamer 6, closed with a lid by seaming, etc., and delivered by the delivery conveyor 7. The conveyors 4,5,7 and the seamer 6 are covered with a tent 8 to form a tunnel-like nitrogen chamber 28 in the tent 8. Nitrogen gas is supplied through the auxiliary nozzles 9 and the main nozzle 10 attached to the upper part of the nitrogen chamber 28. The flow rate of the nitrogen gas can be adjusted by controlling the valve 12 with the controller 11.
