Zusammenfassung:	PURPOSE:A xanthan gum solution is treated with a small amount of a specific enzyme to remove cell bodies as contaminants efficiently to increase the clarity of the product. CONSTITUTION:Lysozyme as an enzyme is added to a xanthan gum solution of 1-10% gun concentration by 1-500ppm and the reaction is effected at a pH of 4.0-9.0 and 25-60 deg.C. At this time, a combination thereof with N-acetylmuramyl-L-alanine amidase and peptidase may be allowed and slow agitation is preferred so that the high-viscosity solution is made uniform during the reaction.
