Zusammenfassung:PURPOSE:To prevent the growth and multiplication of molds, bacteria and insects and store a food, by sealing a mixture of ethyl alcohol with a volatile fatty acid in a container containing the food. CONSTITUTION:A material adsorbing a mixture of ethyl alcohol with 0.01-20% one or more volatile fatty acids selected from acetic, propionic, butyric, isobutyric, valeric, isovaleric and caproic acids or the mixture thereof is introduced into a container or bag in which the mixture is gasifiable and placed in an external container containing a food, e.g. fresh meat or fish, having 0.97-0.99 moisture activity to prevent the direct contact of the food with the liquid mixture. Thus, the change in the taste, flavor, hue, pH, etc. and the deterioration in quality of the food can be prevented.
