Zusammenfassung: | PURPOSE:To obtain solubles having excellent storage stability and capable of keeping its soluble state for a long period of time by solubilizing water-insoluble substances by a polyhydroxy compound or its aqueous solution in the presence of a protein of less than a specific proportion. CONSTITUTION:A water-insoluble substance, e.g., animal or vegetable oils and fats, hydrogenated animal or vegetable oils or fats, ester-exchanged oils and fats, etc., is solubilized by a polyhydroxy compound or in its aqueous solution in the presence of a protein in an amount of 5% or less, particularly 0.05-4.9%. In this method, a protein is added to polyhydroxy compound or its aqueous solution, and then a substance to be solubilized is dropwise added to the solution with stirring, whereupon the substance to be solubilized is uniformly dispersed into the solution containing polyhydroxy compound to form a soluble. The protein used includes ones having a molecular weight of 10,000 or more preferably, e.g., cow's milk casein, soybean, protein, etc., and also the polyhydroxy compound used includes ethylene glycol, etc. |
