Zusammenfassung: | PURPOSE:To prepare TSUKUDANI (food boiled down in soy) of MOZUKU (a kind of seaweed highly ramified into thready filaments and usually served by seasoning with vinegar) containing fruits, without degrading the taste and flavor of the MOZUKU and the fruits, by boiling fresh MOZUKU and fresh fruits together with a seasoning liquid in vacuum under stirring, thereby dehydrating and concentrating the mixture. CONSTITUTION:Fresh MOZUKU, peeled and properly cut fruits, and a properly mixed seasoning liquid are put into a double-walled pan which can be heated and cooled. The content is boiled in vacuum under stirring, and dehydrated and concentrated to a proper concentration in vacuum at a temperature suitable for keeping the flavor and taste of the fruit juice. |
