COOLING OF PLATE-LIKE NOODLE MASS AND COOLING APPARATUS THEREFOR

PROBLEM TO BE SOLVED: To provide a method for cooling a plate-like noodle mass by which the heated and dried plate-like noodle mass is rapidly and uniformly cooled, and a cooling device is made compact. SOLUTION: This method for cooling a plate-like noodle mass subjected to heating and drying treatment comprises the step of standing the plate-like noodle mass so that the face having the smallest area may form a bottom and cooling the noodle mass by blowing air from the side of the face having the smallest area, and the step of cooling the noodle mass by blowing the air from the side facing to the face having the smallest area. The cooling device 10 has the first air-permeable member 20 having plural supporting plates 14 for standing the plate-like noodle mass subjected to heating and drying treatment so that the face having the smallest area may form the bottom, connected thereto in a endless state at a constant interval and rotated, and holes for jetting the air while contacting with the face having the smallest area, the second air-permeable member 24 having the holes jetting the air to the side facing to the face having the smallest area and an air-blasting means 26 for blasting air to the first and second air-permeable members 20 and 24. The cooling device 10 is constituted so that the first air-permeable member 20 and the second air-permeable member 24 may be arranged at the portions not facing to each other.
