Zusammenfassung: | PROBLEM TO BE SOLVED: To obtain an acidic food capable of, in an acidic condition, improving solubility of its saccharose-fatty acid ester component, and sufficiently exhibiting functions, e.g. antimicrobial, emulsifying/dispersing and solubilizing, for a transparent food resistant to becoming turbid and precipitation, to which it is added, and the saccharose-fatty acid ester component itself. SOLUTION: This food contains saccharose-fatty acid esters and is kept at pH 2 to 4, wherein the ester component is composed of fatty acids, at least 50 wt.% of which have a carbon chain length of 8 to 16, monoester(s) at 93 wt.% or more and ashes at 0.5 wt.% or less. |
