Zusammenfassung:PROBLEM TO BE SOLVED: To provide an emulsifying method and obtain an emulsion prepared by the method which effectively avoids inclusion of bubbles while suppressing fluctuation of compositions due to evaporation of water as much as possible, when the emulsion is prepared by stirring a water phase and an oil phase within an evacuated emulsifying system. SOLUTION: Degree of vacuum of a system in the process of emulsification is controlled within a range between an upper limit defined by a formula, Pmax=20 (Ta/-Ts)+Ph (kPa), and a lower limit defined by a formula, Pmin=Ph/0.8 (kPa). Ta is temperature (K) within the system at the time of performing control in the process of the emulsification, Ts is a melting point (K) of the oil phase to be charged and Ph is a saturation vapor pressure (kPa) of the water phase at a temperature in the system of Ta.
