Zusammenfassung:PROBLEM TO BE SOLVED: To provide a bread dough processing apparatus and processing method for the uniform thawing and/or fermentation of bread dough placed on a table. SOLUTION: A bread dough thawing apparatus 100 is provided with a thawing chamber 102. A differential pressure cage 104 is placed in the thawing chamber 102. A punching metal 108 of the differential pressure cage is placed in the cage 104. A blowing port 120 is formed at a part of the upper face of the thawing chamber 102. A collision plate 124 is placed at the inner side of the thawing chamber 102 interposing a gap from the blowing port 120. A truck 160b is placed adjacent to the differential pressure cage 104 interposing a gap from the punching metal 108 of the differential pressure cage. A flow straightening space 170 is formed in the thawing chamber 102 under the blowing port 120.
