Zusammenfassung:PROBLEM TO BE SOLVED: To provide a method for desalting a soy sauce cake by which the permeability of a solvent for elution is improved to carry out an efficient and stable treatment in a short time. SOLUTION: A pulverized soy sauce cake is suspended in a solvent for elution. The solvent for the elution is forcedly fed into the soy sauce cake to thereby suspend the soy sauce cake. After suspending the soy sauce cake, the solvent eluting the salt is extracted and water for washing is further passed through the soy sauce cake to wash away the salt. Water containing salt is used as the solvent for elution and the water containing the salt is reused.
