PRODUCTION OF KONNYAKU AND DEVICE THEREFOR

PROBLEM TO BE SOLVED: To mass-producibly obtain konnyaku (food made from devil's tongue) having a constant taste and a constant quality in sure reproducibility by continu ously kneading a devil's tongue raw liquid with a kneading line mixer under a tension and subsequently treating the kneaded product under specific conditions. SOLUTION: This method for producing konnyaku comprises continuously kneading a konnyaku raw liquid containing a swollen konnyaku raw material by the use of kneading line mixers 4-6 with tensions under pressures sufficient for extending granules of the swollen konnyaku into string-like products, staying the tension-applied konnyaku raw liquid in a holding pipe 7 having a static mixer element therein, adding a coagulating agent to the treated raw liquid, continuously kneading the mixture with the mixing line mixers 9-11 to obtain the konnyaku. One or two of flow cross section-increasing type line mixers whose flow cross sections are increased in the downstream directions are preferably used as either one or both of the kneading line mixers 4-6 and the mixing line mixers 9-11.
