Zusammenfassung:PROBLEM TO BE SOLVED: To obtain a cheese-containing flowable composition maintaining its good flowability, flavor and taste, having improved storage stability, and capable of giving a cheese-containing flowable composition product stable in the flowability, flavor and taste without requiring a sterilization treatment under a severe condition, such as a retort pouch sterilization treatment, on the production of the final product. SOLUTION: A cheese-containing flowable composition contains the cheese in an amount of 10-50wt.% based on the whole amount of the composition and further water in an amount of 1-30wt.%. The pH of the composition is further controlled to 4.5 or lower, and the water activation value of the composition is controlled to 0.91 or lower on the basis of saccharides added to the composition. The cheese-containing flowable composition product can be distributed for a long period at the ordinary temperature and thereby used to simply make cheese cakes, various desserts, etc.
