PRODUCTION OF MEAT PASTE PRODUCT AND APPARATUS THEREFOR

PROBLEM TO BE SOLVED: To provide a process for producing a meat paste product using a single heating procedure, advantageous in view of installation site, apparatus cost, running cost and product quality and effective for preventing the contamination with bacteria. SOLUTION: This apparatus for producing a meat paste product is provided with a nozzle 2 for delivering a kneading raw material in the form of a web, a heating apparatus 1 composed of a rotary drum 8 supplied with the web- formed kneading raw material and having an outer circumferential wall 8b heated from inside and a high-temperature heating chamber 5 encircling the rotary drum in a state opposite to an opening 4, a slitting machine 10 to receive and slit the web-formed meat paste product delivered from a heating apparatus 1 into a high-temperature sterilization chamber 22 placed adjacent to the heating apparatus 1, an apparatus 12 for collecting the paste strings, a packaging apparatus 13a for packaging the collected meat strings with a film, a cutting apparatus 13b to cut the film-packaged paste product to a prescribed length and a clean air tunnel 24 surrounding the area from the paste string delivery position of the slitter 10 to the end of the cutting apparatus 13b.
