Zusammenfassung: | PROBLEM TO BE SOLVED: To produce both a flour paste having a tasty, light and smooth texture comparable to that of a flour paste such as a custard cream cooked in a cooker and a flour paste stock solution for producing the flour paste and provide a method for efficiently and sanitarily producing the flour paste. SOLUTION: This flour paste stock solution comprises starches, saccharides and oils and fats and is in a state thereof substantially containing no bubble. The flour paste is obtained by heating the flour paste stock solution in a stationary state. The method for producing the flour paste is to carry out the homogenizing and defoaming treatments of a flour paste raw material comprising the starches, saccharides and oils and fats, fill the resultant homogenate in a hermetically sealed container and heat the filled homogenate in a stationary state. |
