Zusammenfassung:PROBLEM TO BE SOLVED: To obtain a new -poly-L-lysine degradation enzyme capable of specifi cally producing low molecular weight -poly-L-lysine obtained by culturing -poly-L-lysine degradation enzyme producing bacteria belonging to Chryseobacterium group IIb. SOLUTION: This new -poly-L-lysine degradation enzyme is useful in the field of a food industry and has an action to hydrolyze -poly-L-lysine into an endo type and produce -poly-L-lysine having a low degree of polymerization and does not act on -poly-L-lysine. The optimum reaction conditions, the optimum pH: 7.5, the optimum temperature: 55 deg.C. Stability conditions, the stable pH range: pH7-11, the stability temperature range: until 40 deg.C when heated at pH7.0 for 10 minutes, molecular weight measured by high speed liquid chromatography: about 36000. The degradation enzyme can be obtained by culturing -poly-L-lysine degradation yeast producing bacteria OJ-7 (FERM- P-15004) belonging to Chryseobacterium group IIb and harvesting the product from the culture medium.
