Zusammenfassung:PROBLEM TO BE SOLVED: To obtain a normal temperature marketable cheese having the same effect to vacuum packing, low in cost and excellent in taste and texture by charging carbon dioxide gas into the cheese packet, holding and retort treating allowing to eliminate the head space succeeded with secondary packaging. SOLUTION: Cheese having tabular, cylindrical, discoid or pyramidal shape is packed primarily with a low gas barrier and heat resistant synthetic resin such as high density polyethylene, etc., and carbon dioxide gas is enclosed into this package, held at 1-25 deg.C, retort treated allowing to eliminate the head space and packed secondary with a high gas barrier packaging material. In the secondarily packaging oxygen adsorbent or an inert gas is preferably used.
