Zusammenfassung: | PROBLEM TO BE SOLVED: To obtain a tyrosinase inhibitor having higher inhibitory activity than that of the conventional tyrosinase inhibitor and higher stability by using a specific extract from the grains of Tatary buckwheat (Fagopyrum tataricum). SOLUTION: The grains of Tatary buckwheat cultured at Yunnan in China or in Nepal are used as a raw material to effect extraction with aqueous acetone and the extract is used as an active ingredient. The extract may be directly used as it is, but cis-umbellic acid (1,4-dihydroxy cis-cinnamic acid) of the formula isolated from the extract may be used. As the raw material, the outer skins after using the core of the grains (the first flour) can be preferably used. The extract obtained from the outer skins has particularly high ability to inhibit tyrosinase. This tyrosinase inhibitor is safe to human body and can be used as a browning preventive for fruits and vegetables and also as a food additive for cut fruits and cut vegetable. |
